MA's Kitchen

MA’s Kitchen è nata nel 1985 nella campagna di Dambulla, dove una giovane coppia gestiva un ostello per viaggiatori zaino in spalla. I loro ospiti adoravano i curry dello Sri Lanka, ma continuavano a dire che a casa non trovavano spezie buone e fresche per cucinarli. Da lì è nata l’attività: MA’s Tropical Food Processing (Pvt) Ltd, che un anno dopo ha spedito il primo carico per l’esportazione dalla fabbrica di Dambulla e da allora confeziona i sapori dello Sri Lanka per le cucine all’estero. Nel 2003 è diventata la prima azienda dello Sri Lanka a ottenere la certificazione di sicurezza alimentare SQF; nel 2004 ha aggiunto una linea biologica certificata e nel 2014 la certificazione FLOCERT Fair Trade.

Il cuore della gamma sono le paste di curry dello Sri Lanka pronte all’uso, macinate con spezie fresche, così che per un curry infrasettimanale bastino carne, pesce o verdure e latte di cocco: pollo dello Sri Lanka, pollo alla Colombo, maiale nero, manzo, frutti di mare piccanti, kalupol (spezie tostate scure e cocco), ambul thiyal di pesce, devilled e riso giallo. Tra le paste di cucine più lontane ci sono curry verde thai, rendang, nasi goreng e biriyani. Per cucinare da zero ci sono spezie secche come curry in polvere tostato, peperoncino in polvere, garam masala, stecche di cannella di Ceylon e cardamomo intero, oltre a dadi da condimento per sambol, kiri hodi e rasam.

Nel 1995 MA’s ha rilevato Happy Home, i cui chutney e sottaceti completano una tavola di riso e curry: sottaceto malese, sottaceto singalese, chutney di mango e chutney di datteri e lime. Il marchio Dad’s Garden comprende salse da tavola e da cucina come salsa thai al peperoncino dolce, BBQ al mango, teriyaki, katsu e Worcestershire, accanto alle salse per wok di MA’s (aglio piccante, soia e zenzero, pepe nero), ai sughi per pasta Pasta Roma e al latte di cocco classico.
