It is often overlooked next to the nutmeg it grows around, which is a pity: mace carries a more delicate flavour with a sharper edge, a warm spiciness that sits comfortably in both sweet and savoury cooking. Whole blades can be dropped into a pot and simmered, then lifted out before serving. Ground to a powder, mace works through soups, stews and traditional curries, giving warmth without the heaviness of stronger spices. It is at its best where a dish wants a little sweetness alongside a touch of spice, which is why it turns up so often in cakes, pies and custards. If you are baking, it sits particularly well with apples, berries and pears. Use it sparingly at first; a small amount goes a long way, and its character is easy to taste once you know it.
