Mace is a versatile spice and rewards a light hand. It suits dishes that cook slowly, where its flavour has time to open out — a pot of chicken stock left to simmer for hours is a good example. A little stirred through steaming basmati rice perfumes the whole bowl. It works well in spice blends, and it belongs in baking as much as in savoury cooking. If you usually dust a cappuccino with nutmeg, try a pinch of mace powder instead; the result is gentler and quite distinct.
