Ransaru Wildcrafted Dehydrated Lime Leaves are the leaves of Sri Lankan lime trees, gathered from the wild and dried so they keep in the kitchen cupboard. In Sinhala they are dehi kola, and the dried leaves hold the tangy citrus taste of the fruit together with a complex, herbal flavour of their own.
Lime leaves belong to the cooking of South East Asia, above all Thai food, where they sit alongside lemongrass, basil, chillies and ginger. Used with care they draw many flavours together and balance them, which is why cooks reach for them in curries, soups, marinades, and rice and noodle dishes.
The dried leaves can go into a pot whole, or be sliced thinly and scattered over a salad as a garnish. Sri Lankan lime trees are known for their fragrance, and the leaves go through a careful dehydration process meant to keep their essential oils and sharp, intense flavour while lengthening their shelf life.
Their use does not stop at the stove. The label suggests the leaves as a natural air freshener for rooms, wardrobes and bathrooms, and as an ingredient in potpourri mixes for home fragrance.
The leaves are produced by Ransaru at Eriyagolla, Metiyagane, near Narammala in Sri Lanka, and come in a resealable kraft pouch labelled freshly picked, packed and shipped from Sri Lanka.
