MA's Kitchen Vegetable Curry Mix is a blend of mild spices for making a flavourful vegetarian or vegan curry in minutes. Rather than covering vegetables with heat, it is designed to bring out their natural flavour and give the dish a warm, aromatic character.
The mix is led by coriander, cinnamon, chilli and turmeric, with garcinia, fennel, cumin, ginger, fenugreek, mustard, curry leaves, pepper, pandan, lemongrass, cardamom and clove, plus rice, gram and garlic. Use it with whatever vegetables are in season: potatoes, pumpkin, beans, aubergine, cabbage or a mix of several. The 50g packet is enough for several family-sized curries and is an easy way to add a Sri Lankan vegetable dish to a rice and curry spread.

Allergens: Mustard.
How to use
Fry a sliced onion and a few curry leaves in a little oil, stir in a spoonful or two of the mix and cook briefly until fragrant. Add chopped vegetables such as potato, pumpkin or beans, stir to coat, then pour in coconut milk or water, season with salt and simmer until tender. Serve with rice, roti or bread.
