MA's Kitchen Sri Lankan Devilled Paste is a ready-to-cook paste for one of Sri Lanka's best-loved styles of cooking. Devilled dishes are bolder than a typical curry, built on chilli heat balanced with tangy, slightly sweet tomato and vinegar, and this paste gives you that balance in a single spoonful.
The paste is made from sugar, chilli and ginger, tomato, palm oil, salt, vinegar, onion, garlic, rice and soyabean. Use it to add a kick to chicken, beef or seafood, or with grilled vegetables or tofu for a vegetarian version. A devilled dish is usually stir-fried with onions, capsicums and tomatoes into a thick, glossy sauce, and it pairs naturally with fried rice, yellow rice, string hoppers or roti.
