MA's Kitchen Spicy Seafood Curry Paste (sold by the maker as Spicy Seafood Paste) is a ready-to-use blend for cooking prawns, fish and other seafood the Sri Lankan way. It brings out the natural flavour of the seafood while adding a balanced kick of spice.
The paste starts with tamarind, ginger and chilli, then layers in drumstick (moringa) leaves, garcinia, coriander, cumin, curry leaves, fennel, fenugreek, lemongrass and pandan, with vinegar, garlic, onion and coconut. Tamarind and garcinia give the gentle sourness typical of coastal Sri Lankan fish curries. Use it for a classic curry, a quick stir-fry or as a marinade before grilling. A 75g pack is enough for a family seafood curry served with rice, roti, bread or string hoppers.
