MA's Kitchen Kalupol Curry Paste makes it easy to cook kalupol chicken curry, a traditional Sri Lankan dish known for its dark colour and rich, smoky flavour. Kalupol means black coconut, and the paste is made with a special blend of roasted spices and coconut that gives the curry its deep, aromatic character.
The spice blend includes tamarind, ginger, chilli, coriander, pandan leaves, fennel, pepper, curry leaves, cinnamon, cumin, fenugreek, mustard, turmeric, lemongrass, cardamom and clove, with palm oil, vinegar, coconut, onion, garlic and rice. Roasting the coconut and spices by hand is the slow part of a kalupol curry; with this paste that step is already done. A 75g pack makes a family-sized curry to serve with rice, roti or bread.
