MA's Kitchen Chilli Powder is the maker's premium grade chilli powder, made from carefully selected, sun-dried red chillies with nothing else added. It is finely ground for a smooth texture and consistent flavour, and it brings a fiery kick to curries and marinades.
Chilli powder is one of the basic spices of a Sri Lankan kitchen, used alongside roasted curry powder in meat, fish and vegetable curries, and in sambols and devilled dishes. It is hot, so start with a little and build up. The maker's site uses it in a Polos Curry (young jackfruit curry). This pack holds 250g.
Ingredients
- Chilli
How to use
Add chilli powder with the other ground spices when you start a curry, frying it briefly in the oil with onion and garlic so it loses its raw taste. Use it in marinades for meat and fish, or sprinkle a little into sambols and devilled dishes. Start with half a teaspoon and adjust to taste. The maker's Polos Curry recipe uses it.
