Happy Home Chinese Chilli Paste is made by MA's Kitchen under its Happy Home label, which joined MA's in 1995. It is an extra spicy, smoky, savoury chilli paste, slow-simmered with dried chillies and garlic, and it gives a strong umami kick.
Chilli makes up 21% of the recipe, with ginger, prawns, onion, sesame and garlic in palm oil. Note that it contains prawns, so it is not suitable for anyone avoiding shellfish. Toss it into vegetable noodles, use it to flavour homemade fried rice, or serve it as a dipping sauce for hot snacks. This jar holds 150g.

How to use
Stir a spoonful into vegetable noodles or fried rice in the last minute of cooking, tossing over a high heat so it coats every grain or strand; the maker's site uses it in a Mixed Seafood Fried Rice. It also makes a fiery dip for hot snacks such as rolls and patties. The paste is extra spicy, so add a little at a time.
