Coriander is an annual herb of the family Apiaceae, known botanically as Coriandrum sativum. Every part of the plant is edible, but it is the fresh leaves and the dried seeds that kitchens have always relied on. For this powder we take the ripe seeds and grind them in small batches, so the aromatic oils that give coriander its warm, mild character are still present in the jar.
