Malwatte Curry Powder is a ground Sri Lankan curry blend in the plain, unroasted style, packed by Malwatte in a 50g printed card carton.
Sri Lankan cooks keep two kinds of curry powder: a dark roasted one and a lighter unroasted one. The unroasted kind has a brighter colour and a gentler, more herbal aroma, and it is the usual choice for vegetable, dhal and fish curries. Malwatte sells its roasted curry powder separately; this carton is the unroasted blend.
In the pack
- 50g unroasted curry powder
- Printed card carton, dark photographic design with the green Malwatte panel, Sinhala and Tamil names on the front
- Made and packed by Malwatte Valley Plantations PLC
In the kitchen
Fry a spoonful briefly in oil with onion, garlic and curry leaves, then add vegetables, lentils or fish and simmer with coconut milk. Add the powder a little at a time and taste as you go, since heat and strength vary from blend to blend.
Storage
Keep the carton tightly closed, or tip the contents into an airtight jar once opened, and store it in a cool, dry place away from sunlight.
