It blends turmeric (Curcuma longa), coriander (Coriandrum sativum), mustard (Brassica juncea), clove (Syzygium aromaticum), bay leaf (Laurus nobilis) and onion, which together give the mixture its colour and its basic flavour. Unlike a roasted curry powder, this one is left unroasted, so it stays lighter and more aromatic. It also carries goraka (Garcinia cambogia) paste, which sets it apart from a regular curry powder and gives the blend its particular character.

Use it as you would any everyday curry powder for vegetables: stir it into the pan at the start of cooking so the spices open up in oil, or add it to a simmering pot of dhal, jackfruit, beans or potato. Because it is unroasted, it also works sprinkled dry over vegetables such as aubergine before grilling or frying, where it forms a light, fragrant coating rather than a dark one. Start with a small measure and add more as the dish cooks down, tasting as you go, since freshly opened powder is stronger than one that has been standing.
