Mc Currie Mustard Seeds are small, round, dark brown mustard seeds in a 100g pouch. In Sri Lankan cooking they are tempered in hot oil, where they pop and turn nutty, at the start of many curries.
Ground with a little vinegar or water, the seeds also make the mustard paste that gives pumpkin curry its flavour. It is cleaned, graded, ground and packed at the maker's factory in Makumbura, Pannipitiya, and vacuum packed in a red printed pouch.
In the pack
- Whole mustard seeds, 100g pouch
- Pack name in English and Sinhala
- The pouch carries the line "ISO 22000 Food Safety System Certified"
In the kitchen
- Heat oil, add the seeds and let them pop before adding onion, curry leaves and dried chilli
- Grind to a paste for pumpkin curry
- Use in pickles, achcharu and mustard dressings
- Temper over dhal, potatoes or yoghurt dishes
Storage
Keep the pouch tightly closed in a cool, dry place away from sunlight, and use a dry spoon.
