Ground mace from Malwatte, packed in a flat printed sachet that holds 35g. Mace is the red, lacy covering that wraps the nutmeg seed; dried and ground, it tastes like a lighter nutmeg with a hint of pepper.
The flavour is strong, so use it sparingly and add more to taste. Malwatte Valley Plantations PLC has exported since 1992 and processes and packs its spices in its own factories, which hold ISO 22000 certification.
In the pack
- 35g of ground mace
- Flat printed sachet with a grey and red label
The grey label prints the name in English, Sinhala and Tamil, the words "All Natural", the net weight and a reminder to use the contents within 60 days of opening.
In the kitchen
- Add a pinch to white sauces, soups and potato dishes
- Use in meat curries, biryani and sausages
- Bake into cakes, doughnuts and custards
- Swap for nutmeg where a milder note is wanted
Storage
Keep the sachet tightly closed in a cool, dry place away from sunlight. The label asks you to use the contents within 60 days of opening; tipping them into an airtight jar after opening helps.
Malwatte is the food brand of Malwatte Valley Plantations PLC of Colombo, a Sri Lankan grower, manufacturer and exporter of tea and spices.
