Lakpura Organic Chilli Flakes are dried red chillies crushed into coarse flakes, the form most often labelled crushed red pepper. They are grown by organic farmers without synthetic fertilisers or pesticides, then dried and crushed in small batches and packed in Sri Lanka. Because the heat of any flake comes from the chilli it was made from, the level of spiciness depends on the variety that went into the drying.

Chilli is a fixture of Sri Lankan cooking and shows up generously in red curries, where ground chilli and flakes are both used freely. Timing matters with flakes: added at the very beginning of a dish they can dominate everything else, so it is usually better to stir them in near the end of cooking, where they give pops of heat that sit alongside the other flavours rather than covering them. Whole dried chillies suit slow-cooked curries, where the flavour has time to seep out; flakes work faster. Beyond curry, they are the standard scatter over pizza, stir-fries and spicy pasta, and they can be stirred straight into sauces when you want more heat.
