Lakpura® Cardamom Husk

Lakpura Cardamom Husk is the dried outer shell of green cardamom pods, split open and separated from the seed. If you arrived expecting whole pods, this is a different thing: hollow, papery shells, ribbed and pale green to green, curled open where the seed has been removed, sold loose by weight. Because most of the pod's aromatic oil sits in the seed rather than the shell, the husk carries a lighter, cleaner, more floral version of the same aroma — cardamom scent without cardamom's punch. The husks are gently dried so that what oil they hold is kept, and they come from Elettaria cardamomum, grown in Sri Lanka.

In cooking, the husk works as a background note rather than a lead. Whole pods and seed can dominate a dish, especially anything left on the heat for a long time. The husk stays mild and even, which is why it suits long infusions and slow cooking: it perfumes the liquid without pushing the other flavours aside, and it can sit in a pot for an hour without turning the dish into cardamom.

  • For teas and infusions, steep a few husks in hot water, or alongside Ceylon tea, and lift them out before serving.
  • Simmer them in stock or in milk for desserts and puddings, straining the shells off once the liquid has taken on the aroma.
  • Add them at the start of a biryani or a rice dish, so the steam carries the fragrance through the grains.
  • Put them in early with a slow braise or curry, where they release their scent gradually as the dish cooks down.
