The winged bean — known across the humid tropics as the Goa bean, four-angled bean, Manila bean, and star bean, among many other names — is one of those rare plants where virtually every part is edible: pods, seeds, leaves, flowers, and tuberous roots alike. The seeds sold here are the dried, mature form of Psophocarpus tetragonolobus, a legume long cultivated across South and Southeast Asia and sometimes called the 'soybean of the tropics' for the remarkable amount of protein and oil packed into each small seed.

Botanically, the winged bean belongs to the family Fabaceae and has been grown for generations across India, Sri Lanka, Bangladesh, Burma, Malaysia, Thailand, Vietnam, the Philippines, Indonesia, and Papua New Guinea — though whether its origins lie in Southeast Asia or Papua New Guinea remains an open question in the scientific literature. In Sri Lanka in particular, the plant is traditionally treated as a perennial, with cultivators allowing it to regenerate from underground parts across several seasons before replanting from seed. All current varieties are landraces or selections from landraces, which means the seeds carry the genuine diversity of long, place-shaped cultivation rather than a uniform commercial breeding line.

The seeds display a characteristic range of colour — deep navy-blue, black, dark red, maroon, and purple — with each seed marked by a pale beige hilum, the scar where it was attached to the pod. This variation in colour is a normal and genetically mapped trait within the species, not a sign of mixed product. Mature dried seeds contain substantial quantities of protein and oil, with protein figures in peer-reviewed literature spanning a wide range depending on the accession and analytical method used. The essential amino acid profile is close to that of soybean, with notably high levels of lysine.

In the kitchen, mature dried winged bean seeds must be cooked before eating — like most dried legumes, they contain compounds that are deactivated by heat, so thorough cooking is the standard preparation. Once cooked, they suit the same range of applications as other dried beans: soups, curries, and pulse-based dishes. Immature pods of the plant are a different matter entirely, eaten raw, steamed, boiled, stir-fried, or pickled, and widely used in salads and soups across Southeast Asia.

For growers, the winged bean is a warm-climate, full-sun legume that fixes atmospheric nitrogen through its root system, returning fertility to the soil and reducing the need for additional fertiliser. It thrives in well-drained, moist soil across sandy, loamy, and clay types, and performs best in tropical and subtropical conditions. Most varieties are short-day plants, meaning they flower in response to shorter days, so timing in the garden depends on latitude and season.
