MA's Kitchen Indonesian Nasi Goreng Paste is a ready-to-use cooking paste that brings one of Indonesia's most celebrated dishes to the home kitchen. Nasi goreng — literally 'fried rice' in Indonesian and Malay — is considered a national dish of Indonesia and is known for its aromatic, smoky character and depth of flavour. The 60g pack contains enough paste for four servings and promises a finished dish in 20 minutes.
The paste is made in Dambulla, Sri Lanka, by MA's Tropical Food Processing, a manufacturer with more than 30 years of experience producing food for local and export markets. The ingredient list draws on a broad range of spices and aromatics: chilli, ginger, lemongrass, galangal, tamarind, turmeric, cinnamon and nutmeg sit alongside tomato, onion, garlic, coriander leaves, kaffir lime leaves and coconut, all bound together with palm oil, vinegar, salt and sugar. Rice, soybean and wheat flour are also present in the formulation.
The pack recipe gives a reliable guide to preparation. Long-grain rice is cooked separately, then onions are fried until brown in a wok with oil. Eggs and your choice of protein — seafood, chicken or meat — go in next, followed by finely cut onion, leeks, cabbage and carrot along with the full 60g of paste, sautéed together for five minutes. Coconut milk is brought to the boil before the cooked rice is folded in and the dish served hot, finished with coriander leaves, fried garlic and a fried egg on top. The brand also suggests stirring in a spoonful of garlic and chilli sauce before the rice goes in, for an additional layer of heat.
Once opened, the paste should be refrigerated and used within one month. The product is manufactured by MA's Tropical Food Processing (Pvt) Ltd at No. 157, Kandalama Road, Dambulla, Sri Lanka. Buyers with gluten or soy sensitivities should note that the paste contains wheat flour and soybean.
