Whole fenugreek seeds, packed by Malwatte in a 50g printed card carton. The small, hard, amber seeds have a bitter-sweet, slightly maple-like flavour that mellows with cooking.
In Sri Lanka a few fenugreek seeds go into many curries, especially fish curries and the coconut milk curry known as kiri hodi, and the seeds are also used in pickles and spice blends across South Asia.
In the pack
- 50g whole fenugreek seeds
- Printed card carton, dark photographic design with the green Malwatte panel, Sinhala and Tamil names on the front
In the kitchen
Use a small pinch at a time: fry the seeds gently in oil until they darken slightly, then add onions, curry leaves and the rest of the curry. Too much or overcooked fenugreek turns bitter. The seeds can also be roasted and ground into curry powders and pickle mixes.
Storage
Keep the carton tightly closed, or tip the contents into an airtight jar once opened, and store it in a cool, dry place away from sunlight.
Malwatte is the food brand of Malwatte Valley Plantations PLC of Colombo, a Sri Lankan grower, manufacturer and exporter of tea and spices.
