The plant is a perennial herb with a pseudo stem and thick, irregularly shaped rhizomes; the cardamom of commerce is its dried ripe fruit. For this product the dried fruit is milled to a fine powder in small batches, so the aroma of the whole pod carries through to the ground spice.
