Cardamom is a perennial herbaceous plant with a pseudo stem and thick, irregularly shaped rhizomes. The cardamom of commerce — long known as the "Queen of Spices" — is the dried ripe fruit of the plant, ranked among the most valued spices in the world, second only to saffron. Our pods come from organic growers who work without synthetic fertilisers or pesticides. They are picked, dried and sorted in small batches, then packed whole in Sri Lanka so that the seeds stay sealed inside their husks until you open them.

Cardamom is used above all as a flavouring agent, and the whole pod is the most flexible form to keep in the kitchen. Bruise a few pods and drop them into rice, curries, stocks and slow-cooked meat dishes, then lift them out before serving. Split the husks and crush the seeds in a mortar for cakes, biscuits, milk puddings and spice blends, where freshly ground seed gives far more aroma than pre-ground powder. Pods can also be steeped whole in tea, coffee and simmered milk. Beyond the kitchen, cardamom is the raw material for the extraction of essential oil and oleoresin. It has long been valued in Sri Lankan cooking and in traditional households across the island.
