Kiribath means milk rice in Sinhala, from kiri (milk) and bath (rice). The milk is coconut milk, not dairy milk.

White rice, water, thick coconut milk and salt. The rice is boiled until very soft, then cooked with the coconut milk until creamy, pressed flat and cut into diamonds.

Question 3

How much coconut milk do you need for kiribath?

Accepted Answer

About 400 ml of thick coconut milk for 400 g (2 cups) of rice, which serves 4. The rice is first cooked in 750 ml of water.

Accepted Answer

The coconut milk has not been cooked down enough. Keep stirring over a low heat until the rice looks creamy and comes away from the sides of the pan, then press it flat while hot.

Question 5

What is kiribath eaten with?

Accepted Answer

Most often with lunu miris, a relish of red onion, chilli, Maldive fish, salt and lime. Seeni sambol, curries, jaggery and banana are also popular.

Question 6

Is kiribath vegan?

Accepted Answer

Yes, as made here it contains only rice, water, coconut milk, salt and an optional pandan leaf. Lunu miris usually contains Maldive fish, so choose a fish-free side if you need a vegan plate.
