About 400 ml of thick coconut milk for 400 g (2 cups) of rice, which serves 4. The rice is first cooked in 750 ml of water.

The coconut milk has not been cooked down enough. Keep stirring over a low heat until the rice looks creamy and comes away from the sides of the pan, then press it flat while hot.

Most often with lunu miris, a relish of red onion, chilli, Maldive fish, salt and lime. Seeni sambol, curries, jaggery and banana are also popular.

Yes, as made here it contains only rice, water, coconut milk, salt and an optional pandan leaf. Lunu miris usually contains Maldive fish, so choose a fish-free side if you need a vegan plate.
