Wijaya Papadam is made by hand to keep it crisp, from wheat and urad (undu) flour, the light, blistered wafer that goes on every Sri Lankan rice and curry plate.
Ingredients
- Wheat flour (50%)
- Urad flour, undu (50%)
- Sodium bicarbonate
- Edible salt
How to use
Deep-fry in hot oil for a few seconds until it puffs and turns pale gold, then drain. It can also be puffed in a microwave. Store in a cool, dry place and close the pack tightly after opening.
