Whole fennel seeds, packed by Malwatte in a 50g printed card carton. The small, pale green seeds have a sweet, gentle anise flavour.
Fennel is a regular part of Sri Lankan curry powder, where it is roasted with coriander and cumin, and it is used whole in many South Asian and Mediterranean dishes. Toasting the seeds briefly brings out their sweetness.
In the pack
- 50g whole fennel seeds
- Printed card carton, dark photographic design with the green Malwatte panel, Sinhala and Tamil names on the front
In the kitchen
Add a pinch to hot oil when tempering for a curry, roast and grind the seeds with coriander and cumin for a home-made curry powder, or use them in bread, sausages, pork dishes and tomato sauces. A few toasted seeds can also be chewed after a meal, as is common in South Asia.
Storage
Keep the carton tightly closed, or tip the contents into an airtight jar once opened, and store it in a cool, dry place away from sunlight.
Malwatte is the food brand of Malwatte Valley Plantations PLC of Colombo, a Sri Lankan grower, manufacturer and exporter of tea and spices.
