Mc Currie Goraka Paste is a dark, ready-made paste of goraka (Garcinia), the sour dried fruit Sri Lankan cooks use to give fish curries their tang. It comes in a 250g glass jar.
Whole dried goraka has to be soaked and ground before use. The paste goes straight into the pot, so the sourness spreads evenly through the gravy. It is made at the maker's ready-to-eat factory in the Nalanda Industrial Zone, Matale District, and packed in a glass jar with a red cap.
In the pack
- Goraka paste, 250g glass jar
- Pack name in English, Sinhala and Tamil
In the kitchen
- Use it for fish ambulthiyal, the dry, sour tuna curry, with black pepper and curry leaves
- Add a little to fish and prawn curries in place of tamarind
- Stir a small amount into kiri hodi
- Serve the curry with plain white rice, a potato dish and gotukola sambol
Start with a teaspoon and add more to taste, as the paste is strongly sour.
Storage
After opening, keep the jar closed and use a clean, dry spoon each time.
