Ceylon True Cinnamon (Cinnamomum verum) is graded under two main classification systems — the Continental (C) grades and the Mexican (M) grades — each reflecting differences in quill diameter, texture, and colour. Within the Mexican grading system, M5 occupies the position of highest quality, offering a distinct set of characteristics that set it apart from coarser M grades below it.

What defines M5 grade cinnamon?
