Today, mechanical peelers scrape the outer rind under running water, producing an emulsion that is then fed through centrifuges to separate the essential oil from the water and pulp. The yield is modest: approximately 85 g (around 3 oz) of oil per 100 bergamot oranges.
The finished oil is a clear to pale greenish-yellow liquid. On standing, a small deposit of waxes may form — this is normal and does not indicate poor quality.
