Harischandra Roasted Curry Powder is the dark Sri Lankan curry blend, made by roasting the spices before they are ground. The 100g pack lists coriander, cumin, fennel, dried chillies, pepper, cinnamon, curry leaves, rampe (pandan), cloves and cardamoms.
Roasting deepens the flavour and colour, which is why this powder goes into meat and fish curries, while the unroasted kind is kept for vegetables. Harischandra has packed spices at Matara since 1958.
In the kitchen
- Chicken, beef, mutton and pork curries, and the black pork curry of the south.
- Fish curries and ambul thiyal style dishes, with goraka or tamarind.
- Add towards the end of cooking as well for a stronger roasted aroma.
