Dumbara Kithul Syrup is kithul treacle in a 375ml glass bottle. Kithul syrup and kithul treacle are two names for the same thing, as Dumbara's own packs say: the sap of the kithul palm, boiled down into a thick, dark amber syrup.
The kithul palm (Caryota urens) grows wild in Sri Lanka's wet zone. Tappers cut its flower stalk and collect the sweet sap each day; boiled further, the same sap sets into kithul jaggery. The syrup tastes of dates and caramel, with a hint of toffee.
How to use
- Over buffalo curd, yoghurt and ice cream.
- On pancakes and waffles, or in sweet and savoury cooking.
- To sweeten tea and coffee.
