Black seeds from Bowatte are the small, matt black, angular seeds of Nigella sativa, known in Sinhala as kaluduru. They have a smoky, slightly bitter flavour with a hint of onion and oregano.
How to use
- Toasted for a minute in a dry pan or hot oil, then added to curries, dhal and pickles.
- Sprinkled over naan, roti and bread dough before baking.
- Ground and stirred into yoghurt, dressings or spice blends.

Storage
Keep in an airtight jar in a cool, dry, dark place. Whole seeds keep their flavour longer than ground ones, so grind only what you need.
