Mace from Bowatte, in a 50 g pack. Mace is the dried, lacy, reddish orange covering that wraps the nutmeg seed of Myristica fragrans. Its flavour is close to nutmeg but lighter and warmer, with a slight peppery note.
How it is used
- Baking: cakes, pastries, custards and fruit pies
- Savoury cooking: sauces, soups, stews, meat dishes and biryani
- Ground into garam masala and other spice blends
The blades are often added whole to a simmering pot and removed before serving, or ground just before use.
Storage
Keep closed in a cool, dry place away from sunlight.
